Rising food prices are leading many of us to rethink what is on the table for Christmas dinner.
University of Illinois research, including an outside firm’s survey, indicates about 68 percent of Americans report inflation will affect the holiday meal in some way, says agriculture and consumer economics assistant professor Maria Kalaitzandonakes.
“Lots of folks did say they would cut down on the number of foods they served, or the amounts of foods, changing up the types,” said Kalaitzandonakes. “We did find that people were planning to cut down on proteins. Overall, the most common protein types for Christmas this year were pork. Think ham in your Crock Pot, that type of thing. Turkey was another really common one.”
Others, she said, will have everything about the traditional meal, no matter the cost.
